Make crispy corned beef hash quickly in your air fryer using leftover corned beef and potatoes.

  • 2 cups cooked potatoes, diced small
  • 1 cup cooked corned beef, shredded or chopped
  • 1/2 medium yellow onion, finely chopped
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions

  1. Place the diced potatoes, corned beef, and onion in a bowl.
  2. Drizzle the olive oil over the mixture and toss to coat evenly.
  3. Add the salt, pepper, and garlic powder, mixing well.
  4. Preheat your air fryer to 380F (195C) for 3 minutes.
  5. Place the hash mixture into the air fryer basket in a single layer, working in batches if necessary to avoid overcrowding.
  6. Air fry for 10 minutes.
  7. Shake the basket well.
  8. Continue to air fry for another 5 to 8 minutes, or until the potatoes are golden brown and crispy.
  9. Serve immediately.

Notes

  • For extra crispiness, toss the potatoes separately with the oil before adding the corned beef and onions.
  • If using raw potatoes, boil or steam them until just tender before dicing and proceeding with the recipe.
  • Serve the hash topped with a fried or poached egg for a complete meal.
