- 2 cups cooked potatoes, diced small
- 1 cup cooked corned beef, shredded or chopped
- 1/2 medium yellow onion, finely chopped
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- Place the diced potatoes, corned beef, and onion in a bowl.
- Drizzle the olive oil over the mixture and toss to coat evenly.
- Add the salt, pepper, and garlic powder, mixing well.
