4 small white onions, peeled
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
2 large eggs, beaten
1/2 cup milk
1 1/2 cups panko breadcrumbs

Instructions
Prepare the onions: Make four deep, vertical cuts from the root end toward the stem end of each onion, stopping about 1/2 inch from the stem. Do not cut all the way through. Gently press the onion down to encourage the sections to separate slightly.
Set up a three-stage breading station. In the first shallow dish, mix flour, salt, pepper, paprika, and cayenne. In the second dish, whisk the eggs and milk. In the third dish, place the panko breadcrumbs.
Dredge each onion first in the flour mixture, shaking off excess.
Dip the floured onion into the egg mixture, allowing excess to drip off.
Press the onion firmly into the panko breadcrumbs, ensuring all surfaces and crevices are coated. Press the crumbs in well.
Lightly spray the breaded onions all over with cooking spray.
Preheat your air fryer to 375°F (190°C).
Place the onions in the air fryer basket in a single layer, ensuring they do not touch. You may need to cook in batches.
Air fry for 12 to 15 minutes, flipping halfway through. Spray lightly with cooking spray again after flipping. The onions should be golden brown and crispy.
Remove from the air fryer and serve immediately with your favorite dipping sauce.
Notes
For extra crispiness, chill the breaded onions for 15 minutes before air frying.
Use a simple dipping sauce made from 1/2 cup mayonnaise, 2 tablespoons ketchup, 1 teaspoon horseradish, and a dash of hot sauce.
If your onions are very large, cut them into quarters instead of making petal cuts.
