Make exceptionally crispy chicken wings in your air fryer using a simple Za’atar dry rub. This recipe focuses on technique for maximum crunch.

Ingredients

Scale
  • 2 lbs chicken wings, separated into flats and drumettes
  • 1 tablespoon baking powder (not baking soda)
  • 1 tablespoon Za’atar spice blend
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Pat the chicken wings completely dry using paper towels. This step is crucial for crispiness.
  2. In a medium bowl, whisk together the baking powder, Za’atar, salt, pepper, garlic powder, and onion powder.
  3. Add the dried chicken wings to the bowl. Toss thoroughly until every piece is evenly coated with the spice mixture.
  4. Preheat your air fryer to 380 degrees Fahrenheit (195 degrees Celsius) for 5 minutes.
  5. Arrange the wings in a single layer in the air fryer basket. Do not overcrowd the basket; cook in batches if necessary.
  6. Air fry for 18 minutes.
  7. Increase the temperature to 400 degrees Fahrenheit (200 degrees Celsius) and cook for an additional 4 to 6 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius) and the skin is deeply golden brown and crisp.
  8. Remove from the air fryer and let rest for 2 minutes before serving.

Notes

  • For extra flavor, toss the finished wings with 1 teaspoon of melted butter mixed with 1/2 teaspoon of lemon zest.
  • If you prefer a spicier wing, add 1/4 teaspoon of cayenne pepper to the dry rub mixture.
  • Do not skip drying the wings; excess moisture prevents crisping.
