You want restaurant-quality potato wedges without the deep fryer mess? This easy air fryer potato wedges recipe delivers perfectly seasoned, golden wedges that are wonderfully crispy on the outside and wonderfully tender on the inside. It is a healthy potato fries alternative ready in minutes!

Ingredients

Scale
  • 4 large Russet potatoes, scrubbed clean
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cut the potatoes into even wedges. For extra crispness, soak the cut wedges in cold water for 30 minutes, then drain completely and pat them very dry with paper towels.
  2. In a large bowl, toss the dried potato wedges with the olive oil until they are lightly coated.
  3. In a small bowl, mix together the garlic powder, paprika, onion powder, Italian seasoning, salt, and pepper.
  4. Sprinkle the seasoning mix over the oiled wedges and toss well until every wedge is evenly coated.
  5. Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  6. Place the seasoned wedges in a single layer in the air fryer basket. Do not overcrowd the basket; work in batches if necessary to achieve the best crispiness.
  7. Air fry for 15 to 20 minutes, shaking the basket vigorously halfway through (around the 8-minute mark).
  8. Check for doneness; the wedges should be deep golden brown and crispy. If they are not crisp enough, continue cooking in 2-minute increments.
  9. Remove from the air fryer and serve immediately as a quick side dish or simple air fryer snack.

Notes

  • For a Parmesan kick, toss the cooked wedges with 2 tablespoons of grated Parmesan cheese immediately after they come out of the air fryer.
  • If you prefer a spicier wedge, add 1/4 teaspoon of cayenne pepper to your dry seasoning mix.
  • Make sure your potatoes are completely dry after soaking; moisture prevents crispness.
