2 large Russet potatoes
1 tablespoon avocado oil or other high smoke point oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
Instructions
Wash and dry the potatoes thoroughly. Cut them into uniform 1/2-inch thick wedges or fries.
Soak the cut potatoes in cold water for at least 30 minutes. This removes excess starch.
Drain the potatoes completely and pat them very dry using paper towels or a clean kitchen towel. Dryness is key for crispiness.
In a bowl, toss the dried potatoes with the oil, salt, pepper, and garlic powder until evenly coated.
Preheat your air fryer to 400°F (200°C) for 5 minutes.
Place the seasoned potatoes in the air fryer basket in a single layer or close to it. Do not overcrowd the basket; work in batches if necessary.
Air fry for 15 minutes. Shake the basket vigorously every 5 minutes to ensure even browning.
Continue cooking for another 5 to 10 minutes, checking frequently, until they reach your desired level of crispness. Total cook time is usually 20 to 25 minutes.
Remove from the air fryer and serve immediately.
Notes
For extra crispiness, toss the potatoes with 1/2 teaspoon of cornstarch after oiling them.
If you use frozen potatoes, skip the soaking step and cook them at 380°F (195°C) for 18 to 22 minutes, shaking often.
Avocado oil is recommended because it has a high smoke point suitable for high-heat air frying.
