A straightforward recipe for making classic ground beef and rice stuffed bell peppers using an air fryer for quick, tender results.

  • 4 large bell peppers (any color)
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1/2 cup cooked white rice
  • 1/2 cup tomato sauce
  • 1/4 cup chopped onion
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1/4 cup shredded mozzarella cheese (optional, for topping)

Instructions

  1. Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of the peppers with olive oil.
  2. In a skillet over medium heat, cook the ground beef and onion until the beef is browned. Drain any excess fat.
  3. Stir the cooked rice, tomato sauce, oregano, garlic powder, salt, and pepper into the ground beef mixture. Mix well.
  4. Spoon the meat mixture evenly into the hollowed-out bell peppers.
  5. Place the stuffed peppers in the air fryer basket, ensuring they fit without overcrowding.
  6. Air fry at 375°F (190°C) for 15 minutes.
  7. Carefully open the air fryer, check the tenderness of the peppers, and if desired, top with mozzarella cheese.
  8. Return to the air fryer for another 2 to 3 minutes, or until the cheese is melted and bubbly.
  9. Remove carefully and let them rest for 5 minutes before serving.

Notes

  • For a low-carb or keto version, substitute the rice with cauliflower rice or use extra ground meat and cheese in the filling.
  • If your peppers are very large, you may need to increase the cooking time by 3 to 5 minutes. Check for tenderness with a fork.
  • You can prepare the filling ahead of time and store it in the refrigerator for up to 2 days.
