  • 2 large eggs
  • 1 cup apple cider
  • 1 teaspoon vanilla extract

  • 1/4 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  • Preheat your oven to 375°F (190°C). Grease or line a 12-cup muffin tin.
  • In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
  • In a separate bowl, whisk together the melted butter, eggs, apple cider, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  • Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  • Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  • While the muffins bake, prepare the topping. In a small bowl, combine the melted butter, sugar, and cinnamon for the topping.
  • Once the muffins are out of the oven, let them cool in the tin for a few minutes. Then, dip the tops of the warm muffins into the cinnamon-sugar mixture.
  • Place the coated muffins on a wire rack to cool completely.
