2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup milk
1 1/2 cups peeled and chopped fresh apples (about 2 medium apples)
Instructions
Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease and flour a standard 9×5 inch loaf pan.
In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg. Set aside.
In a large bowl, cream the softened butter and sugar together until light and fluffy.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined; do not overmix.
Gently fold in the chopped fresh apples.
Pour the batter into the prepared loaf pan.
Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
Notes
For a richer flavor, use Granny Smith or Honeycrisp apples.
To make a cinnamon swirl, mix 1/4 cup brown sugar, 1 teaspoon cinnamon, and 1 tablespoon melted butter. Sprinkle half of this mixture over the batter in the pan before baking, then gently swirl with a knife.
This bread is excellent served warm with butter for breakfast or cooled as a snack.
