You need a quick, healthy lunch that keeps you full. This avocado chicken salad uses ripe avocado for a creamy texture instead of mayonnaise. It is high in protein and perfect for meal prepping your lunches for the week.

Ingredients

Scale
  • 2 cups cooked, shredded chicken breast
  • 2 ripe avocados, mashed
  • 1/4 cup finely chopped celery
  • 2 tablespoons finely chopped red onion
  • 2 tablespoons fresh lime juice
  • 1 tablespoon plain Greek yogurt (optional, for extra tang)
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh cilantro or parsley (optional)

Instructions

  1. Place the shredded chicken in a large mixing bowl.
  2. In a separate small bowl, mash the ripe avocados until mostly smooth. You can leave a few small chunks for texture.
  3. Add the mashed avocado, celery, red onion, lime juice, Greek yogurt (if using), and Dijon mustard to the chicken.
  4. Use a fork or spatula to gently mix all ingredients together until the chicken is evenly coated and the salad is creamy. Do not overmix.
  5. Season with salt and pepper. Taste and adjust seasoning as needed.
  6. Stir in the fresh cilantro or parsley, if you are using it.
  7. Serve immediately, or cover and chill for at least 30 minutes to allow the flavors to combine.

Notes

  • For the best creamy texture, make sure your avocados are perfectly ripe.
  • If you are prepping this ahead of time, add the lime juice generously; it helps prevent the avocado from browning quickly.
  • Serve this high protein chicken salad in lettuce cups for a low carb lunch, or with whole-grain crackers.
  • This recipe is naturally keto friendly and gluten free.
