1.5 lbs white fish fillets (like cod or tilapia), cut into 2-inch pieces
1 cup all-purpose flour
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 cup beer or club soda
Vegetable oil for frying
8 small corn tortillas
Mango Salsa:
2 ripe mangoes, diced
1/2 red onion, finely chopped
1/4 cup chopped fresh cilantro
1 jalapeño, seeded and minced (optional)
Juice of 1 lime
Salt to taste
Optional Toppings: Shredded cabbage, avocado slices, sour cream or crema
Instructions
Prepare the Mango Salsa: In a medium bowl, combine diced mangoes, red onion, cilantro, jalapeño (if using), lime juice, and salt. Stir gently to combine. Set aside.
Prepare the Fish Batter: In a bowl, whisk together flour, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Gradually whisk in the beer or club soda until you have a smooth batter, similar in consistency to pancake batter.
Heat Oil: Pour about 1 inch of vegetable oil into a heavy-bottomed skillet or Dutch oven. Heat over medium-high heat until the oil reaches about 375°F (190°C).
Fry the Fish: Dip each piece of fish into the batter, ensuring it’s fully coated. Carefully place the battered fish into the hot oil, working in batches to avoid overcrowding the pan. Fry for 3-4 minutes per side, until golden brown and cooked through.
Drain the Fish: Use a slotted spoon to remove the fried fish from the oil and place it on a wire rack set over a baking sheet to drain any excess oil.
Warm Tortillas: Briefly warm the corn tortillas in a dry skillet or over an open flame until pliable.
Assemble Tacos: Fill each warm tortilla with fried fish. Top generously with the fresh mango salsa and any desired optional toppings.
Notes
You can bake the fish instead of frying for a lighter version. Toss the battered fish with a little oil and bake at 400°F (200°C) for 12-15 minutes, flipping halfway.
Adjust the jalapeño in the salsa to your spice preference.
If mangoes are not in season, you can use diced pineapple or peaches for a similar sweet and tangy flavor.
