You can achieve the most delicious, fluffy, and tender baked sweet potatoes using this simple oven method. Get that perfectly caramelized skin and creamy interior for a healthy side dish that works for any meal.

  • 4 medium sweet potatoes
  • 1 tablespoon olive oil or melted butter
  • Coarse salt, for sprinkling

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with foil or parchment paper for easy cleanup.
  2. Wash the sweet potatoes well under running water. Scrub the skins to remove any dirt. Pat them completely dry with a paper towel.
  3. Prick each sweet potato several times all over with a fork. This lets the steam escape and prevents them from bursting.
  4. Rub the outside of each sweet potato lightly with olive oil or melted butter.
  5. Sprinkle the skins generously with coarse salt. This helps draw out moisture and creates a slightly crisp exterior.
  6. Place the prepared sweet potatoes directly on the lined baking sheet.
  7. Bake for 45 to 60 minutes. The exact time depends on the size of your potatoes. They are done when the skin is slightly wrinkled and a fork easily pierces the center.
  8. Remove from the oven. Let them cool on the baking sheet for about 5 minutes before handling.
  9. Slice them open lengthwise and fluff the inside with a fork. Serve immediately with your favorite toppings.

Notes

  • For extra fluffy insides, you can bake them directly on the oven rack instead of a sheet, but place a layer of foil on the rack below to catch any drips.
  • If you are short on time, you can microwave the potatoes for 5 minutes before baking; this reduces the oven time significantly.
