  • 2 cups grated zucchini, squeezed dry
  • 1 cup corn kernels, fresh or frozen
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg, lightly beaten
  • 2 tablespoons chopped fresh parsley
  • 1/4 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste
  • Olive oil spray for baking

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking sheet or line it with parchment paper.
  2. In a medium bowl, combine the grated zucchini, corn kernels, flour, Parmesan cheese, egg, parsley, garlic powder, salt, and pepper. Mix well until all ingredients are evenly distributed.
  3. Using a spoon or a small cookie scoop, drop rounded tablespoons of the batter onto the prepared baking sheet. You can shape them into small patties or leave them as rustic mounds.
  4. Lightly spray the tops of the fritters with olive oil.
