  • 3 very ripe, mashed bananas (about 1 1/2 cups)
  • 1/2 cup (1 stick) unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, mix the mashed bananas and melted butter together until combined.
  3. Stir in the sugar, beaten egg, and vanilla extract until smooth.
  4. In a separate small bowl, whisk together the baking soda and salt. Add this mixture to the wet ingredients and stir well.
  5. Add the flour to the wet mixture and mix only until just combined. Do not overmix.
  6. Gently fold in the chocolate chips.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely before slicing.

Notes

  • For extra moisture, you can substitute 1/4 cup of the sugar with 1/4 cup of packed light brown sugar.
  • If you want a cinnamon swirl variation, mix 1 tablespoon of cinnamon with 2 tablespoons of brown sugar and sprinkle it over the batter halfway through pouring it into the pan before baking.
  • Do not use yellow or green bananas; they must be heavily spotted or black for the best flavor and moisture.
