Make simple, naturally sweet, and fluffy pancakes using just three pantry staples: ripe bananas, eggs, and oats.

  • 2 very ripe medium bananas
  • 2 large eggs
  • 1/2 cup rolled oats

Instructions

  1. Place the bananas, eggs, and rolled oats into a blender or food processor.
  2. Blend until the mixture is completely smooth. Scrape down the sides if needed.
  3. Let the batter rest for 5 minutes to allow the oats to absorb moisture.
  4. Heat a lightly oiled griddle or non-stick pan over medium heat.
  5. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  6. Cook for 2 to 3 minutes per side, until golden brown and set in the center.
  7. Serve immediately with your preferred toppings.

Notes

  • Use very ripe bananas for the best sweetness and texture.
