Make light and fluffy banana pancakes from scratch using ripe bananas for natural sweetness and moisture. This recipe provides a simple, classic base for your breakfast.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 1/4 cups milk
  • 1 large egg
  • 3 tablespoons melted butter, plus more for the griddle
  • 1 ripe banana, mashed well

Instructions

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  2. In a separate medium bowl, whisk the milk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix. A few lumps are fine.
  4. Gently fold in the mashed banana.
  5. Heat a lightly oiled griddle or large non-stick skillet over medium heat.
  6. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  7. Cook for 2 to 3 minutes per side, until golden brown and bubbles appear on the surface. Flip and cook the other side until done.
  8. Serve immediately with your favorite toppings.

Notes

  • Use very ripe bananas (mostly brown spots) for the best flavor and sweetness.
  • For extra fluffy pancakes, let the batter rest for 5 minutes before cooking.
  • If you do not have buttermilk, add 1 teaspoon of white vinegar or lemon juice to the milk and let it sit for 5 minutes before using.
