A Southern-inspired no-bake dessert featuring layers of creamy vanilla pudding, sweet bananas, and crunchy cookies, reminiscent of classic banana pudding but assembled as an icebox cake for effortless enjoyment and a touch of nostalgia.

Ingredients

Scale
  • 1 (3.4 ounce) package instant vanilla pudding mix
  • 2 cups milk
  • 1 (8 ounce) container whipped topping, thawed
  • 1 (10.5 ounce) package vanilla wafers
  • 3 ripe bananas, sliced

Instructions

  1. In a large bowl, whisk together the instant vanilla pudding mix and milk until smooth. Let it sit for 5 minutes to thicken.
  2. Gently fold the thawed whipped topping into the pudding mixture until well combined.
  3. Arrange a layer of vanilla wafers at the bottom of a 9×13 inch baking dish.
  4. Spread one-third of the pudding mixture over the vanilla wafers.
  5. Arrange a layer of sliced bananas over the pudding.
  6. Repeat the layers: vanilla wafers, pudding mixture, and bananas, two more times, ending with a layer of pudding mixture.
  7. Cover the dish and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the cookies to soften.

Notes

  • For a richer flavor, you can use a homemade vanilla pudding.
  • Ensure your bananas are ripe but not overly mushy for the best texture.
  • Chill the cake for at least 4 hours to allow the cookies to soften and absorb the pudding.
