  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 cup pineapple chunks, fresh or canned
  • 1/2 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ginger powder
  • Salt and pepper to taste
  • Wooden or metal skewers

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a bowl, whisk together pineapple juice, soy sauce, honey, olive oil, garlic powder, and ginger powder to make the marinade.
  3. Add the chicken pieces to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
  4. Thread the marinated chicken and pineapple chunks onto the skewers, alternating between chicken and pineapple.
  5. Preheat your grill to medium-high heat.
  6. Lightly oil the grill grates to prevent sticking.
  7. Place the kabobs on the preheated grill.
  8. Grill for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  9. Remove from grill and let rest for a few minutes before serving.

Notes

  • You can substitute chicken breast for chicken thighs if preferred.
  • Add other vegetables like bell peppers or onions to the skewers for extra flavor and color.
  • Baste the kabobs with any remaining marinade during the last few minutes of grilling, ensuring it boils first.
