  • 1 cup natural peanut butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup maple syrup or honey (adjust to taste)
  • 1 1/2 cups rolled oats
  • 1/2 cup whole wheat flour or oat flour
  • 1 scoop vanilla or unflavored protein powder (optional, for high protein)
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips or chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the mashed bananas, peanut butter, egg, vanilla extract, and maple syrup. Mix well until smooth.
  3. In a separate bowl, whisk together the rolled oats, flour, protein powder (if using), baking soda, cinnamon, and salt.
  4. Add the dry ingredients to the wet ingredients. Stir until just combined. Fold in the chocolate chips or nuts if you are using them.
  5. Drop rounded tablespoons of dough onto the prepared baking sheet, leaving about 2 inches between each cookie. Gently flatten the tops slightly with the back of a spoon.
  6. Bake for 12 to 15 minutes, or until the edges are lightly golden brown.
  7. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  8. Store your make ahead breakfast cookies in an airtight container at room temperature for up to 4 days, or refrigerate for longer storage.

  • For a gluten free breakfast cookies option, make sure your rolled oats are certified gluten free.
