1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon dried oregano
1/4 cup chili powder
2 tablespoons all-purpose flour
2 cups chicken broth
1 (8 ounce) can tomato sauce
1/2 teaspoon salt
1/4 teaspoon black pepper
3 cups cooked, shredded chicken
12 corn tortillas
2 cups shredded Monterey Jack cheese
Instructions
Heat olive oil in a saucepan over medium heat. Add onion and cook until soft, about 5 minutes. Add garlic, cumin, and oregano; cook for 1 minute more.
Stir in chili powder and flour. Cook for 1 minute, stirring constantly.
Gradually whisk in chicken broth and tomato sauce. Bring the mixture to a simmer, stirring until the sauce thickens slightly. Season with salt and pepper. This is your red sauce.
Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease a 9×13 inch baking dish.
Warm the corn tortillas briefly in a dry skillet or microwave to make them pliable.
Dip each tortilla completely into the warm red sauce, coating both sides.
Place about 1/4 cup of shredded chicken down the center of the dipped tortilla. Roll it up tightly and place it seam-down in the prepared baking dish. Repeat with remaining tortillas and chicken.
Pour any remaining red sauce evenly over the rolled enchiladas.
Sprinkle the shredded Monterey Jack cheese over the top.
Bake for 20 to 25 minutes, or until the sauce is bubbly and the cheese is melted and lightly browned.
Notes
For softer tortillas that do not crack when rolled, briefly fry them in hot oil for about 10 seconds per side before dipping them in the sauce.
You can substitute rotisserie chicken for cooked, shredded chicken to save time.
If you prefer a spicier sauce, add a pinch of cayenne pepper with the chili powder.
