4 (6 ounce) salmon fillets, skin removed
2 tablespoons unsalted butter, melted
1 tablespoon paprika
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon cayenne pepper (adjust to taste)
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
Mix the paprika, oregano, thyme, garlic powder, onion powder, cayenne pepper, salt, and black pepper in a small bowl to create the seasoning blend.
Pat the salmon fillets completely dry using paper towels. This helps create a better crust.
Brush all sides of each salmon fillet lightly with the melted butter.
Generously coat all sides of the buttered salmon fillets with the prepared seasoning blend, pressing it gently into the fish.
Heat a large, heavy-bottomed skillet (cast iron works best) over medium-high heat until very hot. Do not add oil or butter to the pan yet.
Carefully place the seasoned salmon fillets into the hot, dry skillet. Cook for 3 to 4 minutes without moving them to form the crust.
Reduce the heat slightly to medium. Cook for another 3 to 5 minutes, depending on the thickness of the fillet, until the salmon is cooked through and flakes easily with a fork.
Remove the salmon from the skillet and serve immediately.
Notes
For a less smoky flavor, use a lower heat setting and cook longer.
If you prefer a crispier crust, use clarified butter or ghee instead of regular butter.
Do not overcrowd the pan; cook the salmon in batches if necessary.
