1 cup (2 sticks) unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup fresh blueberries, tossed with 1 tablespoon flour
1/2 cup powdered sugar (for glaze)
2 tablespoons fresh lemon juice (for glaze)
1 teaspoon lemon zest (for glaze)
Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
Beat in the egg and vanilla extract until combined.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Gently fold in the flour-coated blueberries. Coating the blueberries prevents them from sinking.
Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 10 to 12 minutes, or until the edges are lightly golden. The centers should still look soft.
Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
While cookies cool, prepare the glaze: Whisk together the powdered sugar, lemon juice, and lemon zest until smooth. Add more powdered sugar for a thicker glaze or more lemon juice for a thinner glaze.
Once cookies are completely cool, drizzle or spread the lemon glaze over the tops. Allow the glaze to set before serving.
Notes
For best results, use fresh blueberries instead of frozen. If using frozen, do not thaw them before coating with flour and folding into the dough.
To make the cookies bakery-style, slightly flatten the dough balls before baking.
Store cooled, unglazed cookies in an airtight container at room temperature for up to 3 days.
