  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup (1 stick) unsalted butter, softened
  • 2 large eggs
  • 1 cup plain yogurt
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 1 cup fresh blueberries
  • 1/4 cup lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the yogurt, vanilla extract, and lemon zest until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Gently fold in the blueberries.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  10. While the loaf is still warm, whisk together the lemon juice and 2 tablespoons of powdered sugar (optional, for a glaze) and drizzle over the top.

Notes

  • For an extra burst of lemon flavor, add a tablespoon of lemon extract to the batter.
  • If you don’t have fresh blueberries, frozen blueberries can be used, but toss them in a tablespoon of flour before adding to the batter to prevent them from sinking.
  • This loaf is delicious served plain or with a dollop of whipped cream or a smear of butter.
