A simple recipe for making sweet and savory bacon coated in a brown sugar glaze, cooked until crispy.

  • 1 pound thick-cut bacon
  • 1/2 cup packed brown sugar
  • 1 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with aluminum foil for easy cleanup, and place a wire rack on top of the foil.
  2. In a small bowl, mix the brown sugar, black pepper, and cayenne pepper if you are using it.
  3. Lay the bacon strips in a single layer on the wire rack. Do not let the strips overlap.
  4. Sprinkle the brown sugar mixture evenly over the top side of the bacon strips. Press the sugar lightly so it adheres.
  5. Bake for 15 minutes.
  6. Remove the baking sheet from the oven. Carefully flip each bacon strip over using tongs.
  7. Sprinkle the remaining brown sugar mixture over the second side of the bacon.
  8. Return the bacon to the oven and bake for another 10 to 15 minutes, or until the bacon reaches your desired crispness and the glaze is bubbly. Watch closely after the 10-minute mark to prevent burning.
  9. Remove the bacon from the oven and let it cool on the rack for 5 minutes before serving. The glaze will firm up as it cools.

Notes

  • For a maple flavor variation, substitute 2 tablespoons of the brown sugar with 2 tablespoons of pure maple syrup mixed into the sugar coating.
  • If the sugar starts to look dark too quickly, reduce the oven temperature to 375 degrees Fahrenheit for the final cooking time.
  • This bacon works well as a garnish for salads or served alongside pancakes for brunch.
