3 cups cooked, shredded chicken (rotisserie chicken works well)
8 ounces cream cheese, softened
1/2 cup Buffalo style hot sauce (like Frank’s RedHot)
1/2 cup ranch or blue cheese dressing
1 cup shredded cheddar or Monterey Jack cheese, divided
1/4 cup sour cream (optional, for extra creaminess)
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
In a large bowl, combine the shredded chicken, softened cream cheese, hot sauce, ranch or blue cheese dressing, and sour cream if using. Mix until all ingredients are fully incorporated.
Stir in half (1/2 cup) of the shredded cheese into the chicken mixture.
Spread the mixture evenly into the prepared baking dish.
Top the dip with the remaining 1/2 cup of shredded cheese.
Bake for 20 to 25 minutes, or until the dip is heated through and the cheese on top is melted and lightly bubbly.
Let the dip cool for 5 minutes before serving warm.
Notes
For a slow cooker version, combine all ingredients except half the cheese, place in a small slow cooker, top with remaining cheese, and cook on low for 2 hours or high for 1 hour, stirring halfway through.
Serve with tortilla chips, celery sticks, carrot sticks, or sturdy crackers.
For a spicier dip, increase the amount of hot sauce or add a dash of cayenne pepper to the mixture.
