  • 1 pound processed cheese, cubed (like Velveeta or similar melting cheese)
  • 8 ounces Monterey Jack cheese, shredded
  • 1 (10 ounce) can Rotel, undrained (diced tomatoes and green chilies)
  • 1/2 cup evaporated milk
  • 1/4 cup diced white onion
  • 1 tablespoon pickled jalapeƱo slices, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/4 pound ground sausage (optional)

Instructions

  1. If using sausage, cook the ground sausage in a large saucepan over medium heat until browned. Drain off any excess grease.
  2. Reduce the heat to low. Add the diced onion to the sausage (or directly to the pan if omitting sausage) and cook until softened, about 3 minutes.
  3. Stir in the chili powder, cumin, and salt. Cook for 1 minute until fragrant.
  4. Add the evaporated milk and Rotel to the saucepan. Heat gently, stirring constantly, until the mixture is warm but not boiling.
  5. Gradually add the cubed processed cheese, stirring until completely melted and smooth.
  6. Add the shredded Monterey Jack cheese, stirring until it is fully incorporated and the dip is creamy. Do not let the mixture boil at this stage to prevent graininess.
  7. Stir in the minced jalapeƱos.
  8. Transfer the queso to a slow cooker or a serving dish kept warm over low heat for serving.

Notes

  • For the creamiest texture, shred your own Monterey Jack cheese instead of using pre-shredded, as pre-shredded cheeses contain anti-caking agents that can affect melting.
  • If the dip becomes too thick while serving, stir in a tablespoon of milk or evaporated milk until the desired consistency returns.
  • To keep the queso warm for parties, transfer it to a small slow cooker set to the ‘Keep Warm’ setting.
