1 loaf French baguette
1/2 cup unsalted butter, softened
4 cloves garlic, minced
1/4 cup fresh basil, chopped
1 cup fresh mozzarella, sliced or torn
1/2 cup cherry tomatoes, halved
Salt and freshly ground black pepper to taste
Optional: Balsamic glaze for drizzling
Instructions
Preheat your oven to 375°F (190°C).
Slice the baguette in half lengthwise.
In a small bowl, mix together the softened butter and minced garlic.
Spread the garlic butter evenly over the cut sides of the baguette halves.
Arrange the mozzarella slices and cherry tomato halves over the garlic butter.
Season with salt and pepper.
Place the baguette halves on a baking sheet.
Bake for 10-15 minutes, or until the cheese is melted and bubbly and the bread is golden brown.
Garnish with fresh chopped basil and a drizzle of balsamic glaze, if desired.
Slice and serve warm.
Notes
Use good quality mozzarella for the best flavor.
You can add a pinch of red pepper flakes to the garlic butter for a little heat.
For extra flavor, brush the bread with olive oil before adding the garlic butter.
