2 boneless, skinless chicken breasts
1/4 cup chopped fresh basil
1/4 cup chopped cherry tomatoes
1/4 cup shredded mozzarella cheese
1 tablespoon olive oil
Salt, to taste
Black pepper, to taste
Instructions
Preheat your oven to 375°F (190°C).
Slice a pocket into the side of each chicken breast.
In a small bowl, mix together basil, tomatoes, and mozzarella cheese.
Season the inside of the chicken pockets with salt and pepper.
Stuff the cheese and tomato mixture into the chicken pockets.
Season the outside of the chicken breasts with salt and pepper.
Heat olive oil in an oven-safe skillet over medium-high heat.
Sear the chicken breasts for 2-3 minutes per side until golden brown.
Transfer the skillet to the preheated oven.
Bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
Let rest for a few minutes before serving.
