Instructions

  1. Slice the onions thinly and uniformly. Uniformity helps them cook evenly.
  2. Combine the butter and olive oil in a large, heavy-bottomed skillet or Dutch oven over medium-low heat.
  3. Add the sliced onions and salt to the pan. Stir well to coat them in the fat.
  4. Cook the onions slowly, stirring every 5 to 10 minutes. Keep the heat low to prevent burning. This slow cooking process draws out the natural sugars.
  5. After about 20 minutes, the onions will be soft and translucent. If the bottom of the pan starts to brown too quickly, add a tablespoon of water or broth to scrape up the browned bits (this is called deglazing).
  6. Continue cooking, stirring more frequently as they start to brown, usually another 15 to 25 minutes. If you are using sugar, add it now.
  7. The onions are perfectly caramelized when they are deep golden brown, jammy, and significantly reduced in volume. This usually takes 35 to 45 minutes total for the best flavor.
  8. Remove from heat. Use immediately as a savory sweet onion topping or store for later use.
