1 cup uncooked quinoa, rinsed
2 cups vegetable broth
1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 cup broccoli florets
1 cup sliced carrots
1 cup frozen peas
1/2 cup shredded cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/2 cup milk (any type)
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
Cook the quinoa: Combine the rinsed quinoa and vegetable broth in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until all liquid is absorbed. Fluff with a fork and set aside.
Make the cheese sauce: In a small saucepan, whisk together the flour and milk until smooth. Cook over medium heat, stirring constantly, until the mixture thickens slightly, about 3 minutes. Remove from heat. Stir in the cheddar cheese, Monterey Jack cheese, salt, pepper, and paprika until the cheese melts and the sauce is smooth.
