  • 10 ounces dried egg noodles
  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 tablespoon soy sauce (for chicken marinade)
  • 1 teaspoon cornstarch (for chicken marinade)
  • 2 tablespoons vegetable oil, divided
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup shredded carrots
  • 1 cup sliced mushrooms
  • 1 cup shredded green cabbage
  • 1/2 cup sliced celery
  • 1/4 cup low sodium soy sauce (for sauce)
  • 2 tablespoons oyster sauce (optional, for depth)
  • 1 tablespoon dark soy sauce (for color)
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1/2 teaspoon ground ginger
  • 1/4 cup chicken broth
  • 2 green onions, sliced (for garnish)

Instructions

  1. Cook the egg noodles according to package directions until tender but still slightly firm. Drain them well and set them aside.
  2. In a bowl, toss the cut chicken pieces with 1 tablespoon of soy sauce and cornstarch. Let this sit while you prepare the vegetables.
  3. Whisk together all the sauce ingredients: low sodium soy sauce, oyster sauce (if using), dark soy sauce, sesame oil, sugar, ground ginger, and chicken broth. Set the savory asian noodles recipe sauce aside.
  4. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir fry until it is fully cooked through and lightly browned, about 4-5 minutes. Remove the chicken from the skillet and set it aside.

  7. Pour the prepared sauce mixture over the noodles, chicken, and vegetables. Toss everything together quickly and constantly for 1-2 minutes until the noodles and ingredients are evenly coated and the sauce has thickened slightly.
  8. Remove the skillet from the heat. Garnish your homemade chicken chow mein with sliced green onions before serving immediately.

  • For the best texture, make sure your noodles are fully drained before adding them to the stir fry.
  • If you want a healthier chow mein alternative, use whole wheat egg noodles.
