  • 1 tablespoon vegetable oil
  • 1 pound ground chicken
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/2 cup water chestnuts, chopped
  • 1/4 cup green onions, sliced
  • 1/4 cup hoisin sauce
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/4 teaspoon black pepper
  • 1 head butter lettuce or iceberg lettuce, leaves separated

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the ground chicken to the skillet. Cook, breaking it up with a spoon, until it is browned and cooked through, about 5 to 7 minutes. Drain any excess fat.
  3. Add the minced garlic and grated ginger to the skillet. Cook for 1 minute until fragrant.
  4. Stir in the chopped water chestnuts and sliced green onions. Cook for 2 minutes.
  5. In a small bowl, whisk together the hoisin sauce, soy sauce, rice vinegar, sesame oil, and black pepper.
  6. Pour the sauce mixture over the chicken and vegetables. Stir well to coat everything evenly. Cook for 1 minute until the sauce thickens slightly.
  7. Spoon the chicken filling into the center of each lettuce leaf.
  8. Serve immediately as wraps or bowls.

Notes

  • For a low-sodium option, use low-sodium soy sauce.
  • If you prefer a slightly sweeter flavor, add 1 teaspoon of brown sugar to the sauce mixture.
  • Rinse and thoroughly dry your lettuce leaves before serving for the best crunch.
