Make a rich and flavorful creamy garlic butter chicken pasta entirely in one pot for easy cleanup.

Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 8 ounces dried pasta (fettuccine or penne work well)
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped, for garnish

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat the olive oil and half of the butter in a large pot or Dutch oven over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken and set it aside.
  3. Reduce the heat to medium. Add the remaining butter to the pot. Add the minced garlic and cook until fragrant, about 1 minute. Do not let the garlic burn.
  4. Pour in the chicken broth and bring it to a simmer, scraping up any browned bits from the bottom of the pot.
  5. Add the dried pasta, Italian seasoning, salt, and pepper to the pot. Add enough water to just cover the pasta, usually about 3-4 cups total liquid needed. Bring to a boil, then reduce heat to medium-low, cover, and cook according to pasta package directions, stirring occasionally, until the pasta is al dente.
  6. Stir in the heavy cream and Parmesan cheese. Cook uncovered for 2-3 minutes until the sauce thickens slightly.
  7. Return the cooked chicken to the pot. Stir everything together until the chicken is coated in the sauce.
  8. Serve immediately, garnished with fresh parsley.

Notes

  • If the sauce seems too thick, add a splash more chicken broth or cream until you reach your desired consistency.
  • You can substitute chicken thighs for breasts if you prefer a richer flavor.
  • For a slight kick, add 1/4 teaspoon of red pepper flakes with the garlic.
