- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 lime, cut into wedges
- Optional: chopped cilantro, crumbled cotija cheese
- Preheat your grill to medium-high heat.
- In a small bowl, mix together olive oil, chili powder, cumin, garlic powder, salt, and pepper.
- Brush the corn evenly with the chili-lime mixture.
- Place the corn on the preheated grill.
- Grill for 10-15 minutes, turning occasionally, until the corn is tender and slightly charred.
- Remove from grill. Squeeze fresh lime juice over the corn.
- Garnish with cilantro and cotija cheese if desired.
Notes
- For extra flavor, you can add a pinch of cayenne pepper to the spice mix.
- If you don’t have a grill, you can roast the corn in the oven at 400°F (200°C) for about 20 minutes, turning halfway through.
