Spice up your corn on the cob with this vibrant chili-lime grilled recipe. It’s inspired by Mexican street corn and is perfect for a summer barbecue.

Ingredients

  • 4 ears of corn, husked
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 lime, cut into wedges
  • Optional: chopped cilantro, crumbled cotija cheese

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, mix together olive oil, chili powder, cumin, garlic powder, salt, and pepper.
  3. Brush the corn evenly with the chili-lime mixture.
  4. Place the corn on the preheated grill.
  5. Grill for 10-15 minutes, turning occasionally, until the corn is tender and slightly charred.
  6. Remove from grill. Squeeze fresh lime juice over the corn.
  7. Garnish with cilantro and cotija cheese if desired.

Notes

  • For extra flavor, you can add a pinch of cayenne pepper to the spice mix.
  • If you don’t have a grill, you can roast the corn in the oven at 400°F (200°C) for about 20 minutes, turning halfway through.
