3 large overripe bananas, mashed
1/2 cup (113g) unsalted butter, melted
3/4 cup (150g) granulated sugar
1 large egg, lightly beaten
1 teaspoon vanilla extract
1 1/2 cups (180g) all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup (170g) semi-sweet chocolate chips
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan.
In a large bowl, mash the ripe bananas until mostly smooth.
Pour the melted butter into the mashed bananas and stir to combine.
Add the sugar, beaten egg, and vanilla extract to the banana mixture. Stir until just mixed.
Sprinkle the flour, baking soda, and salt over the wet ingredients. Mix with a spatula until just combined. Do not overmix; a few streaks of flour are acceptable.
Gently fold in 3/4 cup of the chocolate chips.
Pour the batter into the prepared loaf pan. Sprinkle the remaining 1/4 cup of chocolate chips over the top.
Bake for 50 to 65 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs attached.
Let the bread cool in the pan for 10 minutes before carefully turning it out onto a wire rack to cool completely before slicing.
Notes
For the moistest bread, use bananas that are heavily spotted or almost black.
To prevent the top from browning too quickly, loosely tent the loaf with aluminum foil after 40 minutes of baking.
If you prefer a slightly less sweet loaf, reduce the sugar to 2/3 cup.
