Make this decadent, healthy chocolate overnight oats recipe. It tastes like brownie batter, requires no cooking, and is perfect for busy mornings or meal prep.

Ingredients

Scale
  • 1 cup rolled oats
  • 1 tablespoon chia seeds
  • 2 tablespoons unsweetened cocoa powder or cacao powder
  • 1 scoop (about 20g) chocolate or vanilla protein powder (optional, for high protein oats)
  • 1 tablespoon maple syrup or honey (adjust to taste)
  • 1 cup milk (dairy, almond, or oat milk for dairy free overnight oats)
  • 1/4 cup Greek yogurt (or dairy-free yogurt alternative)
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • 1 tablespoon mini chocolate chips (optional topping)

Instructions

  1. Gather all your ingredients. You will need a jar or container with a lid for mixing and chilling.
  2. In your jar, combine the dry ingredients first: rolled oats, chia seeds, cocoa powder, and protein powder (if using). Stir them well to distribute the cocoa evenly.
  3. Add the wet ingredients: milk, Greek yogurt, maple syrup, and vanilla extract.
  4. Stir everything together thoroughly until no dry clumps of oats or cocoa remain. Make sure the chia seeds are submerged.
  5. Seal the jar and place it in the refrigerator for at least 4 hours, but preferably overnight. This allows the oats to soften and the mixture to thicken into creamy overnight oats.
  6. In the morning, check the consistency. If it is too thick, stir in a splash more milk.
  7. Top with mini chocolate chips or other desired toppings. Enjoy this quick grab and go meal cold.

Notes

  • For a richer, brownie batter oats flavor, increase the cocoa powder to 3 tablespoons.
  • If you prefer chocolate peanut butter oats, add 1 tablespoon of peanut butter when mixing the wet ingredients.
  • This recipe is naturally vegetarian. To make it vegan chocolate breakfast, ensure you use plant-based milk and skip the optional protein powder or use a vegan variety.
  • This is a great no cook breakfast idea for meal prep oatmeal. Make 3-4 jars at once.
