Whip up these delicious chocolate protein muffins. They’re perfect for a healthy breakfast or snack, packed with protein and rich chocolate flavor. You’ll learn how to balance sweetness and taste for the best results.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 scoop chocolate protein powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together the flour, cocoa powder, protein powder, baking soda, baking powder, and salt.
  3. In a separate bowl, whisk together the granulated sugar, brown sugar, milk, vegetable oil, eggs, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; a few lumps are okay.
  5. If using, gently fold in the chocolate chips.
  6. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For a richer chocolate flavor, use dark cocoa powder.
  • Adjust the sugar to your preference; you might need less if your protein powder is already sweetened.
  • You can add nuts or berries for extra texture and flavor.
