8 ounces cream cheese, softened
1 cup creamy peanut butter
1/2 cup powdered sugar
1 teaspoon vanilla extract
1/2 cup heavy whipping cream
1/2 cup semi-sweet chocolate chips, melted
1/4 cup mini peanut butter cups, chopped (for topping, optional)
Instructions
In a large bowl, beat the softened cream cheese until smooth.
Add the peanut butter and powdered sugar to the cream cheese. Beat until fully combined and creamy.
Mix in the vanilla extract.
In a separate bowl, whip the heavy whipping cream until stiff peaks form.
Gently fold the whipped cream into the peanut butter mixture until just combined. Do not overmix.
Pour half of the mixture into a serving bowl. Drizzle half of the melted chocolate chips over the top and gently swirl with a knife.
Spoon the remaining dip mixture on top of the first layer. Drizzle the remaining melted chocolate chips over the top.
Chill the dip for at least 1 hour before serving to allow it to set.
Before serving, sprinkle with chopped mini peanut butter cups, if using.
