  • 1 teaspoon vanilla extract
  • 1 cup mashed very ripe bananas (about 3 medium)
  • 1/4 cup sour cream or plain yogurt
  • For the Crumb Topping:
  • 1/2 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 4 tablespoons cold unsalted butter, cut into small pieces

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a standard 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the 1 3/4 cups flour, baking soda, salt, and 1 teaspoon cinnamon. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.
  4. Mix in the mashed bananas and sour cream until just combined. Do not overmix.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just incorporated. Scrape down the sides of the bowl.
  6. Prepare the crumb topping: In a separate small bowl, combine the 1/2 cup flour, brown sugar, 1 teaspoon cinnamon, and 1/4 teaspoon salt.
  7. Cut in the 4 tablespoons cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  8. Pour the banana bread batter into the prepared loaf pan. Sprinkle the entire crumb topping evenly over the batter surface.
  9. Bake for 55 to 65 minutes, or until a wooden skewer inserted into the center comes out clean. If the topping browns too quickly, loosely tent the loaf with foil after 40 minutes.
  10. Let the bread cool in the pan for 15 minutes before carefully turning it out onto a wire rack to cool completely.

Notes

  • Use bananas that are heavily spotted or almost black for the best moisture and flavor.
  • For a crispier topping, chill the crumb mixture for 10 minutes before sprinkling it over the batter.
  • If you prefer a cinnamon swirl inside the bread, reserve 1/4 cup of the batter, mix it with 1 tablespoon brown sugar and 1/2 teaspoon cinnamon, then swirl it into the main batter before topping.
