Make sweet, cinnamon-flavored French toast rolled up and filled with a cream cheese mixture. This recipe provides a simple way to serve a decadent breakfast.

  • 8 slices day-old bread, crusts removed
  • 4 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 2 large eggs
  • 1/4 cup milk
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon butter, for cooking
  • For the Glaze: 1/2 cup powdered sugar, 2 tablespoons milk, 1/4 teaspoon vanilla extract

Instructions

  1. In a small bowl, beat the softened cream cheese, 1/4 cup powdered sugar, 1 teaspoon vanilla extract, and 1/2 teaspoon cinnamon until smooth. This is your filling.
  2. Take one slice of bread and flatten it using a rolling pin until it is thin.
  3. Spread about 1 tablespoon of the cream cheese filling evenly over the flattened bread slice.
  4. Roll the bread tightly from one end to the other to form a log. Repeat with the remaining bread slices and filling.
  5. In a shallow dish, whisk together the eggs, 1/4 cup milk, and nutmeg.
  6. Dip each rolled-up log briefly into the egg mixture, turning to coat all sides lightly. Do not soak the bread.
  7. Melt the butter in a large skillet over medium heat.
  8. Place the roll-ups in the skillet, seam-side down first. Cook for 2 to 3 minutes per side, turning carefully, until golden brown and heated through.
  9. While the roll-ups cook, prepare the glaze by whisking together the 1/2 cup powdered sugar, 2 tablespoons milk, and 1/4 teaspoon vanilla extract until smooth.
  10. Remove the roll-ups from the skillet and place them on a serving plate. Drizzle the glaze over the warm roll-ups before serving.

Notes

  • Using day-old bread helps prevent the bread from tearing when you flatten and roll it.
  • If you prefer a thinner glaze, add milk one teaspoon at a time until you reach your desired consistency.
  • You can dust the finished roll-ups with extra ground cinnamon for added flavor.
