3/4 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/2 cup unsalted butter, softened
1 large egg
1/2 cup milk
1 teaspoon vanilla extract
1 cup chopped fresh peaches
For the Streusel Topping:
1/2 cup all-purpose flour
1/4 cup packed brown sugar
1/4 teaspoon ground cinnamon
1/4 cup cold unsalted butter, cut into small pieces
Instructions
Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it well.
Prepare the streusel topping: In a medium bowl, combine 1/2 cup flour, brown sugar, and cinnamon. Cut in the cold butter with a pastry blender or your fingers until the mixture resembles coarse crumbs. Set aside.
In a large bowl, whisk together 2 cups flour, granulated sugar, baking powder, salt, and 1/4 teaspoon cinnamon.
Add the softened butter to the dry ingredients and mix until the mixture resembles coarse crumbs.
In a separate small bowl, whisk together the egg, milk, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
Gently fold in the chopped peaches.
Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
Sprinkle the streusel topping generously over the batter in each muffin cup.
Bake for 20-25 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
For an extra burst of flavor, add a pinch of nutmeg to the streusel topping.
If you don’t have fresh peaches, you can use thawed frozen peaches. Make sure to drain them well.
You can also add a tablespoon of chopped pecans or walnuts to the streusel for added crunch.
