  3. In a small bowl, mix together the cinnamon and sugar.
  4. Arrange the apple slices in a single layer on baking sheets lined with parchment paper.
  5. Sprinkle the cinnamon sugar mixture evenly over the apple slices.
  6. Bake for 2 to 3 hours, or until the apple chips are dry and crisp. Flip them halfway through baking.
  7. Let them cool completely on the baking sheets before serving.
