1 loaf (1 pound) day-old bread, cut into 1-inch cubes
6 large eggs
1 1/2 cups whole milk
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1/2 cup granulated sugar, divided
2 tablespoons melted butter
1 teaspoon ground cinnamon (for topping)
Instructions
Preheat your oven to 375 degrees Fahrenheit. Grease a standard 12-cup muffin tin well.
Place the bread cubes evenly into the prepared muffin cups, filling each about three-quarters full.
In a large bowl, whisk together the eggs, milk, vanilla extract, 1/2 teaspoon cinnamon, nutmeg, salt, and 1/4 cup of the granulated sugar until combined.
Pour the egg mixture slowly over the bread cubes in the muffin tin, distributing the liquid evenly among the cups. Press the bread down gently to soak up the custard.
In a small bowl, mix the remaining 1/4 cup granulated sugar with 1 teaspoon of cinnamon for the topping.
Brush the tops of the soaked bread lightly with the melted butter.
Sprinkle the cinnamon sugar mixture generously over the tops of the muffins.
Bake for 20 to 25 minutes, or until the tops are golden brown and the centers are set. A knife inserted near the center should come out clean.
Let the muffins cool in the tin for 5 minutes before carefully removing them to a wire rack.
Notes
For make-ahead preparation, assemble the muffins (steps 1 through 4) the night before, cover the tin, and refrigerate. Add 5 minutes to the baking time if baking directly from the refrigerator.
Serve warm with maple syrup or fresh berries.
If you prefer a crispier edge, you can lightly toast the bread cubes before assembling the recipe.
