Ingredients
Scale
1 cup all-purpose flour
1/2 cup protein powder (whey or plant-based)
1/4 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk (dairy or non-dairy)
1/4 cup Greek yogurt
1/4 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
Instructions
Preheat your oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
In a large bowl, whisk together the flour, protein powder, sugar, baking powder, and salt.
In a separate bowl, whisk together the milk, Greek yogurt, vegetable oil, eggs, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are okay.
Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
For extra moisture, you can add 1/4 cup of unsweetened applesauce to the wet ingredients.
Feel free to add mix-ins like berries, chocolate chips, or nuts to the batter.
Ensure your protein powder is unflavored or complements the muffin flavor you desire.
