Make these easy, crustless quiche cups at home! These cottage cheese egg bites are a great protein boost for your meal prep and taste just like your favorite Starbucks egg bites.

  • 1 cup cottage cheese (full fat or low fat)
  • 6 large eggs
  • 1/4 cup milk (any kind)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheese (cheddar, Monterey Jack, or Gruyere)
  • 1/2 cup mix-ins (cooked spinach, diced ham, cooked bacon bits, or chopped bell peppers)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 12-cup muffin tin or use silicone liners.
  2. In a blender, combine the cottage cheese, eggs, milk, salt, and pepper. Blend until the mixture is completely smooth. This step is key for a creamy texture, similar to sous-vide!
  3. Stir in your shredded cheese and your chosen mix-ins into the blended egg mixture.
  4. Pour the mixture evenly into the prepared muffin cups, filling each about three-quarters full.
  5. Bake for 20 to 25 minutes, or until the egg cups are set in the center and lightly golden on top. A toothpick inserted near the center should come out clean.
  6. Let the baked egg cups cool in the tin for about 5 minutes before carefully removing them.
  7. Cool completely before storing for meal prep.

Notes

  • For a smoother texture like the original Starbucks egg bites, you can use an immersion blender directly in a large measuring cup instead of a standard blender.
  • If you want to try a water bath (bain-marie) for extra tenderness, place the muffin tin inside a larger baking pan and fill the larger pan with hot water halfway up the sides of the muffin tin before baking.
  • These protein egg cups store well in the refrigerator for up to 4 days. Reheat in the microwave for 30-45 seconds.
