1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can corn, drained
1 cup chopped Roma tomatoes
1/2 cup chopped red onion
1/2 cup chopped green bell pepper
1/4 cup chopped fresh cilantro
2-3 tablespoons lime juice
1 tablespoon olive oil
1/2 teaspoon cumin
1/4 teaspoon chili powder
Salt and pepper to taste
Instructions
In a large bowl, combine the rinsed and drained black beans and drained corn.
Add the chopped Roma tomatoes, red onion, and green bell pepper to the bowl.
Stir in the chopped fresh cilantro.
In a small bowl, whisk together the lime juice, olive oil, cumin, and chili powder.
Pour the dressing over the bean and vegetable mixture.
Season with salt and pepper to your preference.
Toss everything gently to combine.
For best flavor, cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
Serve with tortilla chips or as a topping for tacos and salads.
