A simple recipe for a hearty, fresh bean and vegetable dip dressed with a zesty vinaigrette, perfect for parties.

  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 cup chopped red onion
  • 1 cup chopped green bell pepper
  • 1 cup chopped red bell pepper
  • 1 cup chopped fresh cilantro
  • 1 (10 ounce) can Rotel diced tomatoes and green chilies, drained
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Combine the rinsed black beans, drained corn, red onion, green bell pepper, red bell pepper, cilantro, and drained Rotel in a large bowl.
  2. In a separate small bowl, whisk together the olive oil, red wine vinegar, cumin, chili powder, salt, and pepper to make the dressing.
  3. Pour the dressing over the bean and vegetable mixture.
  4. Stir gently until all ingredients are evenly coated with the dressing.
  5. Cover the bowl and refrigerate for at least 2 hours before serving to allow the flavors to meld.
  6. Serve chilled with tortilla chips or crackers.

Notes

  • You can prepare this dip up to 24 hours in advance; the flavor improves overnight.
  • For a spicier dip, add one finely minced jalapeƱo pepper along with the onions and peppers.
  • If you prefer a creamier texture, stir in one diced avocado just before serving.
  • This dip works well served over grilled chicken or as a topping for tacos.
