Make these simple, elegant cranberry brie bites using puff pastry. This recipe is quick to assemble and perfect for holiday parties or entertaining.

  • 1 sheet frozen puff pastry, thawed
  • 8 ounces brie cheese, cut into small cubes
  • 1/2 cup whole berry cranberry sauce
  • 1 large egg, beaten (for egg wash)
  • Flour, for dusting

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
  2. Lightly dust a clean surface with flour. Unfold the thawed puff pastry sheet.
  3. Cut the puff pastry sheet into 12 equal squares.
  4. Place one cube of brie cheese in the center of each pastry square.
  5. Top the brie with about 1 teaspoon of cranberry sauce.
  6. Bring the four corners of the pastry up over the filling to meet in the center. Pinch the edges together firmly to seal the bite completely. You can gently shape it into a small pouch or ball.
  7. Place the sealed bites seam-side down on the prepared baking sheet.
  8. Brush the tops of the bites lightly with the beaten egg wash.
  9. Bake for 12 to 15 minutes, or until the pastry is golden brown and puffed.
  10. Remove from the oven and let cool on the sheet for 5 minutes before serving warm.

Notes

  • You can assemble these bites up to 4 hours ahead of time. Keep them covered on the baking sheet in the refrigerator until ready to bake. Add 2-3 minutes to the baking time if baking directly from the refrigerator.
  • For an extra touch, sprinkle a few chopped pecans or walnuts over the cranberry sauce before sealing the pastry.
  • If you do not have whole berry sauce, you can use jellied cranberry sauce, but dice it into small pieces first.
