Make a moist, artisan-style loaf of cranberry walnut bread without kneading. This recipe yields a flavorful, slightly tart bread perfect for breakfast or gifting.

  • 3 cups all-purpose flour
  • 1 teaspoon instant yeast
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 1/2 cups warm water (about 105-115F)
  • 1 cup dried cranberries
  • 1 cup chopped walnuts
  • 1 teaspoon orange zest (optional, for flavor)

Instructions

  1. In a large bowl, whisk together the flour, yeast, salt, and sugar.
  2. Add the warm water. Stir with a wooden spoon until a shaggy dough forms. Do not overmix.
  3. Fold in the dried cranberries, chopped walnuts, and orange zest, if using.
  4. Cover the bowl tightly with plastic wrap. Let the dough rise in a warm place for 12 to 18 hours, or until doubled in size and bubbly.
  5. Lightly flour a work surface. Gently scrape the dough out onto the surface. Do not punch it down.
  6. Shape the dough into a rough ball. Cover it with a clean kitchen towel and let it rest for 30 minutes.
  7. While the dough rests, place a Dutch oven (with the lid on) into your oven. Preheat the oven to 450F (232C).
  8. Carefully remove the hot Dutch oven from the oven. Remove the lid.
  9. Gently place the dough into the hot Dutch oven. Cover with the lid.
  10. Bake for 30 minutes with the lid on.
  11. Remove the lid and continue baking for another 15 to 20 minutes, until the crust is deep golden brown.
  12. Carefully remove the bread from the Dutch oven and let it cool completely on a wire rack before slicing.

Notes

  • For a Costco copycat flavor, brush the top of the loaf with a simple glaze made from 1/2 cup powdered sugar mixed with 2 tablespoons of milk after the bread cools slightly.
  • If you prefer a less tart flavor, soak the dried cranberries in hot water for 10 minutes before adding them to the dough, then drain them well.
  • Use bread flour instead of all-purpose flour for a slightly chewier texture.
