Ingredients

  • 2 tablespoons butter
  • 1 cup chopped yellow onion
  • 1 cup chopped celery
  • 1 cup chopped peeled potatoes
  • 4 cups chicken broth
  • 2 cups corn kernels (fresh or frozen)
  • 1 cup milk
  • 1/2 cup heavy cream
  • 4 slices bacon, cooked and crumbled
  • Salt and pepper to taste

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onion and celery, and cook until softened, about 5 minutes.
  3. Add potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
  4. Stir in corn kernels and cook for 5 minutes more.
  5. Pour in milk and heavy cream. Heat gently until warmed through, do not boil.
  6. Season with salt and pepper to taste.
  7. Ladle into bowls and top with crumbled bacon.

Notes

  • For a thicker chowder, mash some of the potatoes against the side of the pot.
  • You can substitute vegetable broth for chicken broth if preferred.
