  • 1 cup heavy cream
  • 1 stick (8 tablespoons) unsalted butter, cut into pieces

  • 1/2 teaspoon black pepper

Instructions

  1. Place the peeled and quartered potatoes in a large pot. Cover them with cold water by about one inch. Add 1 tablespoon of salt to the water.
  2. Bring the water to a boil over high heat. Reduce heat to maintain a steady simmer and cook until the potatoes are fork-tender, about 15 to 20 minutes.
  3. While the potatoes cook, combine the milk, heavy cream, butter, and minced garlic in a small saucepan. Heat over medium-low heat until the butter is melted and the mixture is warm. Do not boil.
  4. Drain the cooked potatoes thoroughly in a colander. Return the hot, drained potatoes to the empty pot.
  5. Let the potatoes sit in the hot pot for 2 minutes to allow excess moisture to evaporate. This step helps prevent watery potatoes.
  6. Using a potato masher or a ricer, mash the potatoes until mostly smooth. Avoid over-mashing if using a standard masher, as this can make them gluey.
  7. Gradually pour the warm cream and butter mixture into the potatoes while gently folding or stirring until you reach your desired creamy consistency.
  8. Stir in the 1 teaspoon of salt and the black pepper. Taste and adjust seasoning as needed.
  9. Serve immediately for the best texture.
